What is different or new about your life this year that you're thankful for?
This is an easy one. Anyone who reads my blog will know my answer. I am thankful that this year I will be healthy again and hopefully soon will be able to get a job. For those who don't know, I had back surgery a few months ago and it took away all the pain and symptoms I had been suffering with for over 5 years.
We're going to my brother's for Thanksgiving. He's cooking the ham, and I'm bringing the veggies and pies.
The potatoes and squash have been cooked and mashed. Carrots have been cooked. Veggies are packed and in the refrigerator for tomorrow. Apples are peeled and sliced for pies.
After I rest, it's time to assemble the apple pies and make cinnamon rolls. Ever make cinnamon rolls from leftover pie crust dough? It's bliss.
Quick tip: To prevent a soggy bottom crust on fruit pies, sprinkle a tablespoon of flour into the bottom crust before adding the filling.
Happy Thanksgiving everybody!
I've been crying at nothing lately. Then I realized why. This will be the first holiday season without my parents. My Mom passed away 5 years ago right before Christmas, and we lost my Dad on New Year's Day of this year.
I'm not looking forward to the holidays ... at... all. I always took my sons to their house every holiday. Actually we went there for dinner every Friday too. They were the cornerstone of our family. They were there for me if anything went wrong ... and now I'm alone. The family I grew up in is gone. Going to their house for Thanksgiving dinner is gone. Going to their house on Christmas morning and staying for Christmas dinner is gone.
So I've decided to decorate the house like a mad woman this year and start our own traditions. Time to go holiday shopping!
This applesauce comes out tasting just like the middle of an apple pie.
Ingredients:
12-14 McIntosh apples (or any crisp, tart apple)
1 c sugar
3c water
2 tsp cinnamon
1 tsp nutmeg
2 Tbsp butter
Directions: Peel and core apples. Slice into large chunks. Add all ingredients to a large saucepan. Bring to boiling and then turn down to medium low and simmer uncovered 40 minutes, stirring occasionally.
While it is still warm, try it on top of vanilla ice cream!
